Excuse my ignorance guys(and girls)…bought an my book duo, the iTunes server is turned on (by default) so should I be able to see and play back music on my iPad please with out going through my Mac mini. By that I mean should music appear in the default music player on the iPad.

Uhm, no.
iTunes SERVER serves iTunes CLIENTS.
You still need a PC. The music app on the iPad is not an iTunes client.
