I am wanting to buy a 6TB drive to use for music storage using RAID so that I have a mirror drive of my music in case of failure. I realise that will give me 3TB of storage but will any file placed on one drive be automatically copied to the second drive or does the mirror copy only work using the backup software please?

It would automatically create the copy of the file to the second internal drive in RAID 1 configuration, you don’t have to use any backup software for that.
