Is there a way to do this? I couldn’t figure out a solution in time for their Bonnaroo concert broadcast, so I’m hoping to find something before the Olympics begin. TVersity? PlayOn? Another media server? Am I missing some kind of baked-in functionality through one of the SMP YouTube apps?

Not that I know of.
In Youtube publishers will block a lot videos in TV connected devices. If the live event is not blocked you should be able to watch it in the Youtube app from the SMP.
