I am using macOS 10.14.4 and have right-clicked on Documents to choose “Sync to Desktop.” Is it possible to unsync (or choose not to sync) one of the subfolders in Documents? If so, how?

You would need to Unsyc Documents and then go one directory level deeper and Sync what you want
