I am about to replace my mac with one that runs YOSEMITE.
I’ve noticed that the external drives are listed with different OS
systems.
Question: must the external drive run YOSEMITE also , or can I purchase
one that only runs example - leopard up to mountain lion?

It is always good to look for a drive that has compatibility with the current Mac OSX, but this does not mean that some of the older drives may work on the current one, lets see if other users can share their experiences with this .
