I’ve been looking for a personal cloud NAS that incorporates volume encryption and was directed to WD MyCloud. However, reviewing documention I cannot find any reference to this.
Could someone confirm if data is stored encrypted?

No the data is not stored encrypted by the My Cloud firmware or hardware.
It may be possible, I guess, to use SSH to install some sort of Linux module that would perform encryption of some type but officially that is not supported.
The single drive My Cloud drives are designed to be a low cost basic entry level backup network attached storage device with an embedded media server and remote access capabilities.
