I back up my macbook pro and my IMac on My Book Essential for mac but I am not sure that it is backing up everything as the total backed up is far less than what is stored on the macs

What software are you using for backup?
If Smartware , the software will only backup files no apps hence the difference…

Well… the backup folder will show your data
you can also check when was the last time the backup was done when you open preferences on TM
