I cannot find a owner’s manual or any documentation on setting up my new Shuttle SSD TB3, does anyone have a link? (I am talking about the SSD version)

All G-Speed Studios, Shuttles operate the exact same, regardless of types of drives in them so you can use any user guide that is for those units.
