I would like to replace my hard drive with a larger one. Are there instructions somewhere on how to do this??

Highley likely not possible … supported hard drive capacity is most probably locked on the enclosure’s controller board. eg. if the Elements Desktop is a 2TB version and you put a 4TB hard drive inside … it’ll most likely still report 2TB capacity in Windows.
But, if you buy a 3rd party enclosure then you can’t put any size/brand hard drive in it … but, check the supported capacity before buying.
Most 3rd party ones only support up to 8TB … AFAIK
