Can I specify which folders are included in the Safepoint? I dont want the Safepoint to include the Time machine folder but just my pictures, videos & music.

Hi, since safepoints are a snapshot of your My Book Live, it will copy all of the shared folders. Unfortunately the option to select specific folders is not available. See page 86 of the manual for more information.
