Would I be able to create partitions on a 8tb My Book Duo, for example 4x1tb, but also have the advantage of Raid 1. If so, how would I be able to manage ?

Yes, you can create partitions on My Book Duo with RAID 1 config but will get half storage space in 4x1TB My Book Duo drive.
