How can i clean install latest firmware?

Hello, 

I would like to take out the internal HDD, formatt it, and then install latest firmware. 

After installing it, i would like to debloat it (disable indexing, thumbnailer, twonky) and then install Transmission + Mini DLNA. 

Can somebody instruct me how to do this ? 

Or, is it better to install clean debian with owncloud and then Transmission + Mini DLNA ?

What offers the best performance ?
