Is it possible to use these My Cloud Mirror similarly to a single drive? In other words, if i buy a 16tb (2 x 8tb) Mirror, could i disable back up and have 16tb of unique data saved on it?

Yes, you can use complete drive storage on My Cloud Mirror with RAID 0 or JBOD configuration.
