How does a RAID1 drive rebuild work?

If I have my MBWE II rebuild one drive from the other, how does it work?

1.  The partitions, file tables and files on the source drive are written to the target drive, or

2.  The source drive is copied bit-for-bit to the target drive?

This is related to my plan to wipe my drives–see the link below.  If the answer is #2 above, my plan won’t work.

By design, a RAID 1 array will fill a replacement disk drive bit-by-bit in order to ensure absolute parity and minimize degradation.
